Why You’ll Love It
I love recipes that make hosting easier, and this is one of them. The mousse has just the right hint of saffron and cardamom, and the pieces of ras malai add a soft, melt-in-your-mouth bite. Because these are served in individual portions, they’re easy to make ahead, store in the fridge, and pull out when it’s time for dessert. Whether it’s for Diwali, Holi, or just when you’re in the mood for Indian fusion desserts, these mousse cups fit right in.

Pro Tip: Soak your saffron strands in warm milk for about 10 minutes before adding them to the mousse. It brings out a rich golden color and a beautiful aroma. And don’t skip chilling the mousse cups for at least an hour before serving, it gives them the perfect airy texture.
Serving Ideas
Arrange the mousse cups on a pretty tray with marigolds, candles, or a small rangoli to bring in the festive mood. Garnish each one with chopped pistachios, dried rose petals, and just a few strands of saffron for color. They pair beautifully with other Indian desserts if you’re creating a Diwali dinner table.
