Each golden katori is filled with a colorful mix of spiced potatoes, chickpeas, tangy chutneys, creamy yogurt, crunchy sev, and juicy pomegranate. Ingredients

  • For the katori cups
    • 1 cup all-purpose flour
    • 1 tablespoon semolina (sooji)
    • 1 tablespoon oil or ghee
    • Pinch of salt
    • Water, as needed for dough
    • Oil, for deep frying
  • For the filling
    • 1 cup boiled and diced potatoes
    • 1 cup boiled chickpeas
    • ½ teaspoon roasted cumin powder
    • ½ teaspoon chaat masala
    • ¼ teaspoon red chili powder
    • Salt, to taste
  • For assembly
    • ½ cup whisked yogurt
    • ¼ cup green chutney
    • ¼ cup tamarind chutney
    • ½ cup sev
    • ¼ cup pomegranate seeds
    • Fresh cilantro leaves, chopped

Instructions

  1. In a bowl, combine flour, semolina, oil, and salt. Add water gradually to form a firm dough. Cover and rest for 20 minutes.
  2. Divide into small balls and roll each out into a circle. Grease the outer side of a small steel katori (bowl) and drape the dough over it, pressing gently to shape.
  3. Deep fry the katori (bowl side down) until golden and crisp, then remove and carefully slide out the dough cup.
  4. For the filling, mix potatoes, chickpeas, cumin powder, chaat masala, chili powder, and salt.
  5. To assemble, fill each katori with the potato-chickpea mix, drizzle with yogurt, green chutney, and tamarind chutney, then top with sev, pomegranate seeds, and cilantro. Serve immediately for the perfect crunch.
