Ingredients

  • 5-6 pieces ras malai store-bought or homemade, cut into chunks
  • 1 cup heavy whipping cream
  • ½ cup sweetened condensed milk
  • ½ teaspoon ground cardamom
  • ½ teaspoon saffron soaked in 1 tablespoon warm milk
  • ¼ teaspoon rose water optional
  • 2 tablespoons pistachios chopped
  • 1 tablespoon dried rose petals

Instructions

  • In a chilled mixing bowl, whip the heavy cream until soft peaks form.
  • Gently fold in the condensed milk, cardamom, saffron milk, and rose water. Whip again until medium peaks form.
  • Place 2–3 pieces of chopped ras malai into the base of each small dessert glass.
  • Spoon the saffron mousse over the ras malai to fill the glass. Garnish with chopped pistachios, rose petals, and a few strands of saffron.
  • Chill for at least 1 hour before serving. Keep refrigerated until ready to serve.

Notes

  • For a richer flavor, use homemade ras malai and fresh cream.
  • Rose water adds a delicate floral note, but can be swapped with extra cardamom for a spicier aroma.
  • Best served chilled on the day of assembly.
