Ingredients

  • 1 lb large shrimp peeled and deveined, tails on or off
  • 1 lb fingerling or baby potatoes halved if large
  • 4 ears of corn cut into thirds
  • 1 lb smoked sausage sliced
  • 2 cups low-sodium chicken broth or water
  • 2 tablespoons Old Bay seasoning plus extra for garnish
  • 1 teaspoon garlic powder
  • ½ teaspoon salt optional, adjust to taste
  • ½ teaspoon black pepper
  • 1 lemon halved
  • 3 tablespoons unsalted butter melted
  • 1 tablespoon fresh parsley chopped (optional)

Instructions

  • Pour the broth into the Instant Pot. Layer potatoes first, then corn, then smoked sausage on top. Sprinkle Old Bay (reserve ½ tbsp for shrimp), garlic powder, salt, and pepper over everything.
  • Secure lid, set valve to sealing, and cook on High Pressure for 5 minutes. Perform a quick release.
  • Open the lid, place the shrimp on top, and sprinkle with the reserved Old Bay. Close lid again and cook on High Pressure for 0 minutes (or sauté for 2-3 minutes until shrimp are pink and cooked through). Quick release.
  • Drain excess liquid, or keep a little broth for dipping. Drizzle with melted butter and juice from half a lemon. Garnish with parsley and extra Old Bay. Serve with lemon wedges and crusty bread or rice.

Notes

  • If using larger potatoes, cut them into 1-inch pieces so they cook evenly.
  • Adjust salt depending on whether your broth is salted. Old Bay already adds plenty of flavor.
  • Shrimp cook very quickly. Use the 0-minute pressure setting or sauté mode to prevent overcooking.
