Air Fryer Pumpkin Fritters with Cinnamon Sugar

  • In a medium mixing bowl, whisk together pumpkin puree, egg, sugar, and vanilla until smooth.
  • Gradually add flour, baking powder, cinnamon, nutmeg, and salt until a thick batter forms. If the batter feels too stiff, add milk a tablespoon at a time until scoopable.
  • Lightly grease your hands. Scoop spoonfuls of batter and roll into balls. Place them in a greased air fryer basket, leaving space between each. Brush the tops lightly with melted butter.
  • Air fry at 350℉ for 8-10 minutes, turning once halfway, until golden brown and cooked through.
  • To make the coating, stir together ½ cup granulated sugar and 1 teaspoon ground cinnamon in a shallow bowl.
  • While still warm, roll the fritters in the cinnamon sugar mixture until coated evenly. Serve immediately for the best texture.

Notes

  • Fritters are best enjoyed warm, straight from the air fryer.
  • For extra crispiness, you can lightly spray the fritters with oil spray in addition to brushing with butter.
  • Store leftovers in an airtight container at room temperature for up to 2 days. Reheat in the air fryer for a few minutes before serving.
