Air fryer pumpkin fritters with cinnamon sugar are golden, fluffy, and coated in warm spices. A quick and cozy pumpkin dessert recipe made right in the air fryer.
In a medium mixing bowl, whisk together pumpkin puree, egg, sugar, and vanilla until smooth.
Gradually add flour, baking powder, cinnamon, nutmeg, and salt until a thick batter forms. If the batter feels too stiff, add milk a tablespoon at a time until scoopable.
Lightly grease your hands. Scoop spoonfuls of batter and roll into balls. Place them in a greased air fryer basket, leaving space between each. Brush the tops lightly with melted butter.
Air fry at 350℉ for 8-10 minutes, turning once halfway, until golden brown and cooked through.
To make the coating, stir together ½ cup granulated sugar and 1 teaspoon ground cinnamon in a shallow bowl.
While still warm, roll the fritters in the cinnamon sugar mixture until coated evenly. Serve immediately for the best texture.

For extra crispiness, you can lightly spray the fritters with oil spray in addition to brushing with butter.
