Ingredients

  • 3 cups watermelon cubed
  • 2 tablespoons feta cheese crumbled
  • 2 tablespoons balsamic glaze
  • A few mint leaves chopped

Instructions

  • Start by cutting the watermelon into bite-sized cubes. Place the cubed watermelon in two small salad bowls.
  • Sprinkle the crumbled feta cheese over the watermelon cubes. Evenly drizzle the balsamic glaze over the watermelon and feta.
  • Chop the fresh mint leaves and sprinkle them over the salad. Gently toss the salad to combine all the ingredients. Serve immediately and enjoy!

Notes

  • Chill the watermelon! Cold watermelon is key for a refreshing salad. Store it in the refrigerator before preparing the dish.
  • The balsamic glaze should be drizzled lightly. Too much glaze can overpower the other flavors. It's best to add it just before serving.
  • Watermelon tends to release its juices as it sits, so it's best to assemble the salad before you serve it. This will prevent the salad from becoming soggy.
