For the salad:

  • 4 cups spring mix a blend of baby lettuces, spinach, and other tender greens
  • ½ cup cherry tomatoes halved
  • ½ cucumber sliced
  • ¼ red onion thinly sliced
  • ¼ cup feta cheese crumbled
  • ¼ cup nuts such as almonds, walnuts, or pecan
  • ¼ cup dried cranberries optional

For the dressing:

  • In a large bowl, combine the spring mix, cherry tomatoes, cucumber, red onion, feta cheese, nuts, and dried cranberries.
  • In another small bowl or jar, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Drizzle the dressing over the salad just before serving. Toss gently to coat. Serve immediately.

Notes

  • The fresher your greens and vegetables, the better the salad will taste. Look for vibrant, crisp greens and ripe tomatoes.
  • Toss the dressing just before serving: To keep the salad crisp, add the dressing right before serving rather than letting it sit on the salad. This prevents wilting.
  • You can prepare the dressing ahead of time and store it in the fridge. Just give it a quick shake before using.
