Curried White Bean Dip

Ingredients

  • 1 15 oz can butter beans drained and rinsed (use any white beans of your choice)
  • 1 tablespoons olive oil
  • 1 small onion sliced
  • 1 clove garlic minced
  • 1 tablespoon curry powder
  • 2 tablespoons lemon juice
  • ¼ cup cilantro leaves and stem
  • ½ teaspoon salt adjust as per taste

Instructions

  • Heat oil in a frying pan over medium heat and add the onions and garlic to the pan. Saute for 3-4 minutes or until the onion softens. Add the curry powder and saute for another minute. Turn off the heat and let the mixture cool down slightly.
  • In a food processor, combine the prepared onion mixture, white beans, lemon juice, cilantro, and salt. Blend until smooth and creamy. Serve with your favorite finger foods.

Notes

  • For maximum flavor, use both the leaves and stems of cilantro.
  • Allow the dip to chill in the refrigerator for at least 30 minutes before serving. This helps the flavors to meld together.
