Heat oil in a frying pan over medium heat and add the onions and garlic to the pan. Saute for 3-4 minutes or until the onion softens. Add the curry powder and saute for another minute. Turn off the heat and let the mixture cool down slightly.
In a food processor, combine the prepared onion mixture, white beans, lemon juice, cilantro, and salt. Blend until smooth and creamy. Serve with your favorite finger foods.
Notes
For maximum flavor, use both the leaves and stems of cilantro.
Allow the dip to chill in the refrigerator for at least 30 minutes before serving. This helps the flavors to meld together.
