  • Add the softened cream cheese and sugar-free cherry syrup to a mixing bowl and beat until smooth and creamy with no lumps.
  • In a separate bowl, add the hot water and cherry gelatin. Stir until completely dissolved, then let it cool slightly.
  • In another bowl, whip the heavy whipping cream until soft peaks form.
  • Slowly pour the cooled gelatin mixture into the cream cheese mixture, mixing until smooth and fully combined.
  • Gently fold in the whipped cream until the mixture becomes light and fluffy. Fold in the diced cherries until evenly distributed.
  • Transfer to a serving bowl and refrigerate for at least 2 hours until set. Serve chilled.

Notes

  • Make sure the gelatin mixture is warm and not hot before adding it to the cream cheese mixture.
  • Beat the cream cheese thoroughly at the start to avoid lumps.
  • Fold the whipped cream gently to maintain a light texture.
  • Chill time is important for the fluff to set properly.
